How did the opening day go?

How did you choose the name of your restaurant?
Initially, the banh mi sandwich shop was going to be called Banh Mi King (like the famous Burger King). We thought it was funny, even a little cheeky. This choice of name was also our way of paying homage to classics like Le Roi du Smoke Meat and La Reine de la Patate, which are both known for their snack bar-style restaurant concept.

When developing our sandwich shop logo, we didn’t like the “K” look of the “King,” so “King” became “Queen.” Banh Mi King became Banh Mi Queen . The name change was a double win, because not only amazon data did the letter improve our logo, but the word “Queen” paid homage to my mother-in-law who once owned a banh mi van in Vietnam.


The opening week was a bit chaotic to be honest. A first opening day is very exciting, but always a bit stressful. For example, at one point, as demand was increasing, I realized that I still hadn’t found the perfect bread! That was stressful, but it all worked out in the end. Since the official opening day is the result of several months of work, it’s not easy, but it’s still a relief to see the fruits of our labor.

How are things going for Banh Mi Queen ?
We have had a lot of positive feedback from our customers and we are very happy to have a lot of customers including many regulars. Since the sandwich shop is connected to Big in Japan, we have customers who come in for a sandwich when it is less busy there.

How do you like Lightspeed Restaurant?
One of my favorite things is that the system is cloud-based. We start preparing for the lunch rush at 8 a.m. and are now open from 11 a.m. to 7 p.m. on Saturdays. It’s convenient to be able to check in on how things are going at the restaurant from home or one of our other locations. It gives me more flexibility and allows me to finish my workday at the sandwich shop earlier.
